Singapore | Pollen at Gardens by the Bay

Pollen, one-Michelin-one starred chef Jason Atherton's second restaurant in Singapore, which takes over his one-star restaurant Pollen Street Social in London. Pollen housed in the most pretty garden in Singapore--Gardens by the Bay, behind Marina Bay Sands hotel, and surrounded by the garden with a view of the bay and the Singapore Flyer.



Amuse Bouche : traditional baguette with spiced hummus and butter, and some cute buns with gorgonzola cream.


The bun itself was really chewy, but nothing special about the taste. The butter with a garlic twist and topped with seaweek, quite special.


Pretty table tableware with different plant printings which really fit the garden-setting Pollen!


Pollen offers affordable and valuable set lunch($55++) which includes 3 courses and completed with your choice of tea or coffee.


Chicken liver parfait, pea espuma, Maderira gel, cacao

The chicken liver parfait has a deep flavor, it was smooth and creamy. The green pea espuma and Maderira gel were very refreshing and nicely balanced with the chicken liver.


Swordfish tartare, frozen dashi, walnut bergamot dressing was indeed another refreshing starter. The swordfish tartare was fresh and naturally sweet, while compare to the previous one, the overall taste could be higher.


200-day grain-fed Black Angus beef from Stockyear, piccalilli served with cauliflower, baked sweet potatoes, cucumber, English Mustard and Piccalilli (a sauce made from all these ingredients mentioned). The beef looks dry but tastes incredibly tender and flavorful. My partner said it was one of the best beef ever.


Poached red snapper, squid, black paella, pomelo and cucumber salad

The red snapper was poached perfectly, topped with some puffed cereals. Side with black paella stuffed in squid, which was a great combination with a sour twist. The overall flavor was a lit bland compare to the beef course, but the texture was interesting - tender snapper, crunchy cereals and al dante paella.


Matcha: Strawberry, sour plum, tahini

The matcha mousse itself was smooth and high in flavor, with the Singaporean twist of kaya cake base and the sour plum sorbet which brought a nice balance, the entire dish was really enjoyable. One serving is not enough please.


Black Forest: Cherry, pandan, JAAL 75% chocolate, shimeji, roasted tomatoes came on a real wood which looks really appealing! This dessert was infused by the black forest cake with a touch of Pandan (sponge cake), the chocolate was high in flavour was indeed rich and cream. The cherry sorbet was a great combination with the chocolate.

Our bill came in a wooden 'treasure' box.


In order to access to Pollen, you can either drive a car and call the restaurant to arrange a buggy to pick you up at the carpark, or go there through Marina Bay Sands by giving them a call for buggy. Otherwise, it may take you a long walk to reach the restuarant.


Moreover, it is free for all the guests dine in Pollen to access to the garden, which might cost you $20++ for a ticket, so it is really worthy to dine in Pollen! Pollen is also vgetarian-friendly, they do serve the vegetarian menu and vegetarian courses are also available in set lunch.
