Came for: New menu after renovation
Les Amis firstly opened on 15 March 1994, it wins over 60 awards over 21 years. In 2015, Les Amis is ranked at No.13 of Asia's 50 Best Restaurants by SanPellegrino and “Four-Star Award” by Forbes Travel Guide Star Ratings.
Les Amis has undergone several renovations over the years, the most recent one in 2007 at a cost of S$2.5 million. Recently, on its 21th birthday, it closed for a month for renovations again - undergo its first major kitchen overhaul. The restaurant's interiors remain mostly intact, although the wallpaper, carpet and furniture has been replaced, and expanded with the addition of private rooms.
The France-borned Chef de Cuisine Sebastien Lepinoy, is a protégé of legendary chef Joël Robuchon. He combines French techniques with elements of Japanese produce, creating exquisite dishes that delightfully complement the local palate and climate.
Les Amis offers three different set menus during lunch time like before: Menu Express ($55++): 3-course fixed menu, finish within 45 minutes; Menu Formule($80++): your choice of 1 cold appetizer + 1 hot appetizer + 1 main + 1 dessert ; Menu Tasting($145++): 6 courses of signature dishes by chef Sebastien Lepinoy.
I picked the Menu Formule ($80) because there are VARIETY of courses to pick from, about 10 dishes under each section - mostly new dishes created by Chef de Cuisine Sebastien Lepinoy, keeps the classical dishes on the menu. I seriously encountered a difficulty time to decision which dishes i want to try first.
For dinner, four menus are offered: Menu Classical $165 (same as Menu Tasting during lunch), Menu Signature ($220), Menu Tasting ($280), and a 3-dish a la carte menu. (Check the menu here)
A warm and high-quality freshly-baked bread basket. I love them all, especially love the one with tomato, which was very flavorful. This is
probably the most flouring bread basket among all the fine dining restaurant i have been to in Singapore.
Hand-churned artisan French butter with a pinch of sea salt
For the cold appetizer, i picked the new item Foie Gras & Anago-mille feuille of anago & fine layers of foie gras terrine, served with a radish and apple matchstick salad. It was my first time to have such kind of mille feuille that combines two of my favorite ingredients, and the taste is novelly good. The anago was sweet and deep in flavor, works perfectly with the rich and creamy foie gras.
Next came the beautiful Warm Lobster Rouelle - lobster & langoustine mousse encased within the baby organic spinach, placed on the bed of classic fish bone sauce. This dish was highly recommend by the restaurant manger, thee smell of fish bone sauce made me mouth-wartering and could't wait to see the inside.
Inside is generous portion of fresh lobster and langoustine, very bouncy and naturally sweet. It has a lovely fragrant of butter, the popping Salmon nicely lifted up the 'umami' flavor.
Salmon Served Two Ways is a classical main course on the menu - one way of salmon tartar, and another one in a lightly seared form, with aromatiques vegetables.
The salmon tartar was very delicate and fresh, the tartar dressing was very flavorful.
The seared salmon looks boring but the texture was perfect. It has a lightly seared outer-layer with a lovely burnt smell, remain the center part in a 'sashimi' texture, which was succulent and juicy. The rich oils perfectly melted-in-my mouth. The taste was a bit bland compare to the tartar, but the aftertaste of the sweetness from the fish itself was very enjoyable.
For first timers, i highly recommend the Chocolate Soufflé for dessert - no doubt my favorite in town. This time i picked the Alphonso Mango - in a sugar sphere with coconut sorbet.
The mango puree perfectly bursting out, it was very smooth and has a deep mango flavor. Coconut (sobert) is certainly the best friend of Mango. Placed on based of pineapple and fresh rounder Alphonso Mango, the overall flavor was very 'summer' & 'tropical‘, yet very refreshing. Sweet and perfect ending.
All the sets come with complimentary coffee/tea & mignardises. Les Amis used to serve Madeleines with Lemon Curd for petit fours, which was my favorite Madeleines in Singapore. The Financiers is certainly good as the recipes are similar.
I love the high-quality and delicious food with a Japanese twist at Les Amis, which is a quite unique type of cuisine in Singapore. The servers are very friendly and works efficiently. Compare to my impressive previous visit a year ago (which was also perfect), I much prefer the ambiance and food nowadays. Every single dish on the menu sounds very appetizing and i hope i can have more stomaches to try them at once :( No worries i will definitely back soon and often and try out each.
