Singapore | L'Atelier de Joël Robuchon
Joel Robuchon, one of the world’s most famous Michelin chef and a legend in the culinary world. Awarded ‘Chef of the Century’ by the Gault Millau guide, Joël Robuchon opens a lot of French restaurants named after himself in cities such as Hong Kong, Maucau, Paris, Tokyo, New York and London. His restaurants have garnered a total of 25 Michelin stars – more than any other chef in the world.
Joël Robuchon Singapore housed in Resort World Sentosa (RWS), with two different dining concepts: Joël Robuchon Restaurant which is more formal, and the casual one L'Atelier de Joël Robuchon (Asia's Best 50 Restaurants 2013)
L'Atelier de Joël Robuchon is a unique dining concept where chefs experiment and create, working on new ideas and fusing different concepts reflective of the locale.
Similar toL'Atelier de Joël Robuchon in other cities such as Hong Kong and Bangkok,L'Atelier de Joël Robuchon Singapore is decorated entirely inthe signature black and red furnitures to create a dramatic sleek look for the Atelier concept, with the theatrical aspect of watching the food prepared from the open kitchen.
L'Atelier de Joël Robuchon serves dinner from Thursday to Monday with different menu: 'create your own' , pre-theatre, a la carte or discovery. Lunch is only available on Sundays. For the ' create your own' menu, a 3-course set is reasonably priced at $48/$68, 4-course at $68/$98, 5-course at $108/$138 for lunch/dinner. The 8-course discovery menu is priced at $210.
Compare to the bread basket in Robuchon HK and Macau, or even from last time i was here, the portion is MUCH stingy. Last time here was almost a year ago, and the restaurant was still doing weekday lunch at that time. I don't know whether that's because of its now focus on dinner, anyway it was a huge difference.
But hopefully the quality was not bad at all - the pumpkin bread was very soft and fluffy, traditional baguette has a lovely crispy crust.
Start with the signature (and one of my favorite) Amuse Bouche : foie gras custard, port reduction, parmesan foam - rich, creamy and high in flavor.
LA DAURADE - King snapper ceviche on top of fresh creamy cilantro avocado (+$6)
The king snapper was fresh and juicy, on top of the creamy yet refreshing avocado with a twist of lemon - the two nicely balanced and was very refreshing. Topped with some chili powder to lift up the overall flavor.
L'ENDIVE- Endive salad mixed with shavings of parmesan and foie gras
It was a really pretty dish with different colors, it makes me so mouthwatering. The foie gras was rich, creamy and melted-in-my-mouth, the smoked duck breast (the red one on the back) was high in flavor yet tender. The endive salad was fresh and works well with the duck breast and foe gras. Not bad.
LE SANIT PIERRE - John dory in a saffron sauce with glazed carrots
The fish has a crispy skin yet tender meat, saffron sauce was not too heavy but works well. The main dish also comes with the signature mashed potato.
Robuchon's mashed potato is really famous and is served in all his restaruants, the ratio of milk, butter and potato was just perfect. It was rich, creamy and indulgence but simply cannot resist, even for person who is 99% not a fan of potatoes. You can ask the server to add in case you want some more.
LA CREME CRULEE - Pistachio creme brulee, "Mara des bois" strawberry sorbet, seasonal fruits
The creme brulee itself was creamy, not overly sweet and has a strong pistachio fragrance, with a lovely aftertaste. The berries and sorbet brought a refreshing twist to the dessert, sweet ending.
The serves are very friendly and try their best to communicate with guests once they have time. The ambiance was modern, elegant but relax, unlike other French restaurants which makes people feel restricted. Quality of the food is no doubt good, and very pocket-friendly. While to be honest, i found the food is souless since most Robuchon's restaruants served food in the same style and similar dishes. Traditonal and quite heavy and buttery compare to other fine dining restaurants in town. Accompany by its remote location from downtown core, L'Atelier de Joel Robuchon is not the top place to fine dine on my list.
