Les Amis is the last restaurant i visited before leaving Singapore for a long while. Firstly opened in 1994, Les Amis provides anthentic French food here with a Japanese twist. It has won tons of awards in decades, and was lastestly positioned at No.14 of Asia’s 50 Best Restaurant 2015. Les Amis is so far my top two French restaurant in Singapore (another one is JAAN).

I usually pick the tasting menu when i fine dine, but i have to point out the the ‘Menu Formulate’ served during lunch time is seriously a steal – $80++ for 3 courses and 1 dessert, there are more than 5 dishes to choose from under each section and i am sure there’s somthing for you.
I personally think the bread basket at Les Amis is the best in town, L’Atelier de Joel Robuchon in Sentosa used to make very quality one but it became a history. Besides the traditonal baguette and sourdough, the savory iberico bread and tomato roll were more flavorful. All the breads were freshly baked, loved their golden crust and soft center. Les Amis is the only restaurant in Asia that serves Le Pnclet butter – no more than 20 restaurants around the world could get this butter from the private seller, not even Robuchon. Normally the restaurant uses the sharp-shaped butter for guests, it was our fortunate that chef gave such nice ‘gift’ to us. The butter was very rich, creamy and perfect with the bread. So farhe best butter i have ever had.
‘Cold angel hair in harmony with caviar and black truffle’ is the signature dish at Les Amis, you
the dish came with a fragrance of black truffle, the cold angel hair was beautifully topped with caviar, and edible flowers. Pasta was al dante, the flavor of black truffle and caviar balanced very well, which showcases its ‘harmony’. I cannot find more words to describe its amazing flavor, you have to try it by yourself.
The tomato fondant was too pretty to eat – with refreshing layers of tomato jelly, fondant and delicate avocado coulis. The tomato jelly was refreshing and balanced very well with the creamy avocado coulis. A very good dish to awaken the taste buds.
Lobster Cardinalise is a classic lobster salad with truffle and traditional french dressing. The lobster was perfecly cooked, very moist and simply umami. The aromatic black truffle paired well with the lobster, the traditional french dressing was unexpectly delight and enhanced the flavor of the dish.
Pan seared scallop is another classical dish at Les Amis, i had this during my first visit years ago was missed it a lot (i didn’t order this after my first visit because i want to try other dishes). The scallops were perfectly seared, with a thin caramelised crust but incredible juicy inside. The base of ‘nage’ with organic seasonal vegetable pearls and salmon roe was very umami. Another highly-recommended dish!
Move on to the main course. We skipped the wagyu and salmon which we have tried before, instead, my partner picked the ‘Caramelized Quail’ and i picked ‘Pan Seared Sea Bass’ (suppl $15). The soya caramelized quail was moist and flavorful, on the side the quail meat was made into a sussage but it was too tender and delicious. The dish was served in an oriental style with baby organic spinach, which brought a touch of healthy to the dish.
Uses line-caught sea bass from vendee coast of saint-gilles-croix-de-vie, and served with a refined and aromatic traditional “amvericaine” sauce, the entire dish looks quite simple but the umami flesh was very memorable. The entire flesh was melt-in-mouth tender, the caviar brought a luxerious hint the the simple dish.
The floating islands is a new dessert on the menu. Served with crunchy pink pralines on a vanilla creme anglaise, the airy ‘cake’ was light and works well with the vanilla creme base. It was your best choice if you are looking for something not too heavy yet delicious.
The raspeberyy charlotte came with a lovely pinky appearance which makes me mouth-watering. The homemade ladyfingers was well-done, side with fresh raspberries ice cream and mousse in charlotte and summer lychees, it was quite refreshing and brings an impressive ending to the meal.
We were pretty stuffed at this point, but we cannot resist those beautiful choux when it came to our table. However the cream inside was too heavy for our liking.
It was another memorable dining experience at Les Amis, all the dishes we tried were beautiful. I seriously loved everything here (maybe except the choux), especially the angel hair pasta and scallops. The service was very efficient, everyone here are very friendly and the manager can even recognize me, which made me feel like back to another ‘home’. The restaurant is quite busy during lunch time, but the ambiance is still upscale and elegant. I am sure i will miss this place a lot when i am not in Singapore.
