JAAN, locates on 70th floor of Swissotel The Stamford,is one of my favorite restaurants in Singapore so fat. Derived from the ancient Sanskrit word for ‘bowl’, JAAN offers intimate modern French cuisine with a stunning view. The artisanal menu by Chef de Cuisine Julien Royer is built around a passion for showcasing the finest ingredients through simple but beautiful dishes that reflect both culinary tradition and creativity. The result is imaginative, innovative cuisine that celebrates and respects seasonality, terroir and the skills of the world’s best gourmet producers.
he restaurant itself was not big, only about 40-50 sitting, so it was kind of hard to reserve. That might also because Jaan was ranked No.17 of Asia’s best 50 restaurants 2014 this year.The interior decoration is a little bit old, but still elegant and formal. While the awesome view of the Marina Bay adds a lots points to it.
There are 3 kind of sets for lunch, which are 3-courses business lunch, 5-courses digestion lunch, and 7-courses chef’s discovery lunch. Each set includes coffee and tea.
Firstly comes with several amouse bouches. In the back was 3 finger food,Crispy chicken skin and cheese, Black sponge with langoustine, Cantal Cheese and Potato Croquettes with tarragon. The last one, the cheese ball was great.
In the from is the signature amuse bouche “My Hummus”, it is Chef Royer’s hummus made with lentils from Saint-Flour Auvergne and chestnut paste. This was served with wafer thin seeded rye crackers.
Help myself with a extremely thin cracker. The cracker was surprisingly crispy, but the more impressive taste was from the hummus. The hummus taste really great with a touch of sweetness from the chestnut paste, and a bit freshness from the chives. This is definitely one of the best amuse bouches i have ever had in my life.
Then I was served with another amuse bouche, also a signature one, Ceps Sabayon with wild mushroom ‘tea’ . The attendant poured the mushroom tea from the teapot to the little cup fiiled with barley, lovage and walnuts.
It was high in mushroom flavor and tastes so real – creamy and delightful.
After pampering my taste buds, the meal was going to start with some warm breads. There are four kind of bread to choose from: sourdough, walnut bread, baguette and onion brioche. The brioche was really crispy and flaky, the best ive had in Singapore.The bread was warm, with a crispy outside but fluffy inside. There are large amount of nuts and rasins inside which makes the taste and texture so good.
55’ ROSEMARY SMOKED ORGANIC EGG ,Ratte potato, chorizo iberico, buckwheat
There’s a say, if you never tried this egg dish at JAAN, you’ve never been there. Indeed, it was that amazing as it looks.
Ratte potato, chorizo iberico and buckwheat were served in a glass bowl with burning rosemary on the bottom.
Then add the smoked egg into the glass, and wait for another 55 seconds till the egg are cooked. OMG the runny yolk makes me so mouthwatering, first time feel 55s was so long.
The egg just taste so amazing. It has a very soft and creamy texture, with some crunchy ratte potato, chorizo iberico and buckwheat to enhance the texture of the entire dish. Definitely die-for!
CONFIT RAINBOW TROUT, langoustine , cauliflower, miso caramel
The trout has a lovely pink color, it was really tender that you don’t even need the knife. While im not very impressive with the flavour because it was kind of bland.
‘EXOTIC’ Pineapple, banana, cheesecake
The dessert was a really piece of art, and tastes amazing as well. The banana bread was fluffy and high in banana flavor, pairs so well with the refreshing pineapple.
Even the petit fours were really impressive. It consist of citrus puree with chocolate pop rocks, rosemary ice-cream lollipop and coconut marshmallow. The texture of the ice cream is more like sorbet, which is refreshing but high in vanilla flavor.
By using popping candies to enhance the texture of the entire piece, JAAN definitely knows how to impress the guests.
Lunch set also comes with a cup of tea or coffee.
The dining experience at Jaan was great, no matter the presentation of the food or the flavour – everything was perfect (except the trout which is a little bit bland). $75++ for 3 courses was really a steal because i got much more than 3 courses. Plus the stunning view, i think it really worth the money. While restaurant itself was kind of old, the decoration is not that high-end as L’Atelier de Joel Robuchon, or those Michelin star restaurants in Hong Kong. Service have large room to improve. Anyway, love JAAN and definitely will come back soon.
