Sushi Hashimoto 鮨はしもと
Sushi Hashimoto is one of the well-known sushiya running by a new-generation chef Hiroyuki Hashimoto. Despite at a young age, Hashimoto-san has been considered a rising star who lead his sushiya to won the Tabelog Silver Award in 2017. He has been trained at the famous sushiya Sugita before he opened Sushi Hashimoto in Dec. 2014. The restaurant located in a residential neighbourhood in Shintomicho in Tokyo.
Compare to most other more famous sushiyas in Tokyo, getting a reservation at Sushi Hashimoto is not that difficult but i wouldn't say it is easy. I booked my meal almost two months in advance. Hashimoto serves two seatings except every Monday (day off). My dinner was started 5:30pm, and all other guests at the eight-seat counter were Japanese except me. There was only one Omakase course at Hashimoto which includes 7 ostumami dishes, 12 nigiris and 1 tamago. I paid around 20k JPY including one small jug of sake. It was a nice experience regarding to the reasonable price. Tastewise, nothing was spectacular to me expect his amazing Kohada. Overall, I have no plan to revisit it shortly.
